Makes 12 muffins
Ingredients
6 eggs
1 broccoli head (steamed & pureed)
1/2 cup coconut flour
1/2 cup bone broth or water
2 Tbsp olive oil
1/2 tsp baking soda
Method
Preheat oven to 180 degrees and line a 12 x muffin tray with baking paper
Whisk eggs
Combine coconut flour and baking soda in a separate bowl
Add pureed broccoli, oil, eggs and water/bone broth and mix well
Add dry ingredients to wet ingredients and combine
Spoon mixture into prepared muffin tray
Bake for 15-20 minutes until golden
Eat with lots of butter
Note: you can use this recipe as a base and then add any other ingredients you like! I added roasted sweet potato, feta and sprinkled pumpkin seeds on top before baking.
